least-- the first one...because since it was just like an introduction to the series, it didnt have much to it

the fifth one, the first death that theyve seen because of the war finally sinks in...they lose someone very very important to them and have to learn to keep living without him...and i think they finally realize the whole of what theyre up against in this war, and how war affects the lives of everyone around them , including themselves...

Oooh... they go through stages of maturity in every book so i'm not sure. Maybe at the end of Half-Blood Prince because Harry has to go on a life-threatening mission and his friends decide to stick by him, even if death is around the corner. Making that descision shows a lot, including maturity!
